Beans aren’t the only ones who know where their next meal comes from. The beans’ cooks also have a firm grasp of the shipping routes of the region. One family that sets up at the Central Market every day travels all the way from the town of Harasta in northern Syria. After dining on roasted honey and cheese, they’ll take the opportunity to discuss the difficulties of shipping their food. Their olive oil is shipped from Aleppo and Turkey to Beirut. While shipping the olive oil to Lebanon, the family will spend several weeks on a boat that will travel thousands of kilometers through the Mediterranean Sea. Upon reaching Beirut, they’ll sail across the lake, over the mountains and through the backwaters to the Libyan coast.
